Responsibilities
  • Manage the savoury kitchen team, overseeing all preparation, quality standards, and day-to-day discipline.
  • Maintain a high-performance service pace and total consistency across breakfast, lunch, and dinner services.
  • Ensure strict adherence to food safety, HACCP, and allergen awareness standards at all times.
  • Lead the kitchen brigade and expertly manage ticket flow during the Head Chef's absence.
  • Monitor and optimize cost management through proactive inventory control, waste reduction, and supplier liaison.
Requirements
  • Advanced mastery of French and Mediterranean culinary techniques.
  • Exceptional skills in sauce preparation and plating precision.
  • Comprehensive knowledge of HACCP and food safety protocols.
  • Valid Food Safety Certification.
  • Professional proficiency in English.
