Restaurant General Manager

As the founding General Manager, you will transform a world-class Australian concept into a Dubai landmark. You will lead the full pre-opening lifecycle, from recruitment to operational setup, ensuring this 240-seat fire-led grill room becomes the pinnacle of premium dining in the region. This is a unique opportunity to lead a massive 150-person team and drive commercial success for a multi-revenue profit center.

• Take full ownership of end-to-end P&L performance, commercial results, and labor cost modeling.
• Lead the pre-opening phase, including recruitment, organizational structuring, and SOP implementation.
• Serve as the primary brand representative and custodian of the concept in the Dubai market.
• Partner with the Executive Chef and international leadership to deliver a world-class fire-led dining experience.
• Leverage a deep personal network within Dubai’s premium dining ecosystem to drive immediate market traction.
• Oversee all operational components including the grill room, bar, raw bar, and private cigar lounge.
• Implement the 'Ubuntu' philosophy, ensuring team success through mutual respect and collective effort.

• Proven track record as a General Manager in ultra-premium, high-volume restaurant environments.
• Essential international pre-opening experience, specifically building and leading teams from scratch.
• Strong financial acumen with experience in full P&L ownership and complex manpower planning.
• Deep expertise in menu pricing and the profitability dynamics of multi-revenue hospitality centers.
• A highly connected profile in the Dubai market with the ability to activate high-net-worth networks.
• Charismatic, floor-led leadership style with high emotional intelligence and servant leadership mindset.

• 3 to 5 years of leadership experience within the Dubai premium hospitality market.
• Extensive experience operating in high-end steakhouse or fire-led grill room environments.

• Successful and timely venue launch with full operational readiness.
• Achievement of P&L targets and optimized labor cost ratios within the first year.
• High team retention and engagement scores based on the Ubuntu cultural framework.
• Establishment of the venue as a top-tier destination in the Dubai Harbour ecosystem.
