Sous Chef - Savoury

About the Role

As our Sous Chef, you will be the backbone of the savoury kitchen, driving consistency and discipline while maintaining the playful spirit that defines the LPM experience. Responsibilities
  • Manage the kitchen brigade and oversee all food preparation and quality control
  • Assume leadership of the kitchen in the Head Chef's absence
  • Support menu development and operational planning with creative and technical input
  • Oversee section management and maintain team motivation during high-pressure peak services
  • Ensure absolute adherence to food safety, hygiene, and health regulations
Requirements
  • 5–7 years of kitchen experience with 2–3 years specifically as a Sous Chef or Senior Cook
  • Expertise in French or European fine dining or high-end all-day dining
  • Deep technical knowledge of classic and contemporary French culinary techniques
  • Proven track record of leading and motivating kitchen teams during peak periods
  • Solid understanding of inventory management, ordering processes, and supplier liaison
Preferred Qualifications
  • Experience working in multi-service environments (breakfast, lunch, and dinner)
  • Knowledge of UAE HACCP standards and local regulatory requirements
Success Metrics
  • Consistency in food quality and presentation across all service periods
  • Efficiency and morale of the kitchen brigade
  • Successful implementation of new menu items
  • Adherence to food safety and hygiene audits
Benefits

We offer a competitive package including a monthly salary of AED 15,400 (AED 10,000 basic + AED 5,400 allowance) and one round-trip flight per year to your home country.
