- Supervise and lead kitchen operations across all sections in the absence of the Sous Chef.
- Taste and validate daily mise-en-place to ensure total alignment with LPM’s culinary standards.
- Monitor food quality, presentation, and consistency on every pass during service.
- Support forecasting and communicate precise ordering quantities to the Sous Chef.
- Mentor, train, and develop junior kitchen team members to foster a culture of continuous learning.
- Maintain a disciplined, motivated, and professional atmosphere during high-pressure service periods.
- Minimum 5 years of culinary experience in premium or fine dining environments.
- Previous professional experience with French and/or Mediterranean cuisine.
- Solid understanding of kitchen Standard Operating Procedures (SOPs) and food safety regulations.
- Proven ability to lead a section or a full kitchen during busy service shifts.
- Strong attention to detail and the ability to remain calm under pressure.
- Culinary Arts qualification or equivalent professional certification.
- Experience working in high-volume premium restaurant settings.
- Basic computer skills for kitchen reporting and ordering purposes.
- Consistency in dish presentation and taste as validated by the Head Chef.
- Efficiency in mise-en-place preparation and reduction of food waste.
- Successful development and promotion of junior kitchen staff members.
- Smooth operational flow during peak service hours.
